Prepare and Shake

Chill a coupe or martini glass by filling it with ice and water while you build the drink. In a cocktail shaker add vodka, fresh lemon juice, fresh orange juice, orange liqueur, simple syrup, and egg white (if using).

Dry Shake

If using egg white, first dry-shake (no ice) vigorously for 10–15 seconds to emulsify and create foam.

Wet Shake

Add ice (about 6 cubes) to the shaker and shake hard for 10–15 seconds until the outside of the shaker gets very cold and slightly frosty.

Discard ice and water from the chilled glass. Double-strain the cocktail through a fine-mesh strainer into the chilled glass to remove ice shards and ensure a silky texture. Garnish with a lemon wheel on the rim. Serve immediately.

Build the Drink

Fill a highball or Collins glass with crushed ice (or cubes). Add dark rum and fresh lime juice over the ice.

Top and Bitters

Top with ginger beer (about 4 oz). Add two dashes of Angostura bitters evenly over the top.

Stir gently once or twice to integrate the bitters without flattening the ginger beer. Garnish with a lime wedge and optionally a piece of candied ginger on a pick. Serve with a straw.

Assemble

Fill a wine glass or large rocks glass with ice cubes. Add gin, elderflower liqueur, and fresh grapefruit juice.

Balance and Top

If you prefer slightly sweeter, add 0.25 oz simple syrup. Stir gently to combine, then top with club soda (about 2 oz) to create a light spritz.

Express a grapefruit twist over the glass to release oils, rub the peel on the rim and drop it into the drink. Serve immediately.
