Method
Cake batter
Whisk dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cardamom, and salt until evenly combined.
Combine sugars and wet
In a separate large mixing bowl, whisk granulated sugar and light brown sugar with the eggs until smooth. Slowly whisk in the oil and vanilla until uniform.
Fold in carrots, pineapple, raisins, walnuts
Add the grated carrots, well-drained crushed pineapple, raisins, and toasted chopped walnuts to the wet mixture and stir to combine.
Combine wet and dry
Pour the dry ingredients into the wet in two additions, folding gently with a spatula until just combined. Do not overmix; batter should be thick but pourable. Scrape sides and bottom to ensure no streaks of flour remain.
Bake
Divide batter evenly between the prepared pans (about 3 cups batter per pan). Smooth tops. Bake on the preheated oven racks for 30–38 minutes, rotating pans halfway through, until a toothpick inserted in the center comes out with a few moist crumbs but no raw batter and the cakes spring back lightly when touched.
Cool
Let cakes cool in the pans on a wire rack for 15 minutes. Run a knife around edges, invert onto racks, peel off parchment, and cool completely (at least 1 hour) before frosting.
Cream cheese frosting
Beat cream cheese and butter
In a large bowl or stand mixer fitted with a paddle attachment, beat the softened cream cheese and softened butter on medium speed until smooth and homogenous, about 2–3 minutes. Scrape down the bowl as needed.
Add sugar and flavor
Reduce mixer speed to low and add confectioners' sugar 1 cup at a time, mixing until incorporated. When all sugar is added, raise speed to medium and beat until light and fluffy, about 2–3 minutes. Add vanilla, fine salt, and lemon zest (if using) and beat 20–30 seconds to combine. Adjust consistency: if too thick, add 1 tsp milk at a time; if too thin, add more powdered sugar 1/4 cup at a time.
Chill briefly
If frosting became warm from beating, chill in the refrigerator for 15–20 minutes to firm slightly before assembling the cake so it holds shape.
Candied carrots
Make syrup and candy carrots: In a small skillet or saucepan over medium heat combine 1/2 cup water and 1/2 cup granulated sugar. Stir just to dissolve sugar, then bring to a gentle simmer. Add carrots and simmer gently until carrots are tender-crisp and the syrup thickens and becomes glossy, about 8–12 minutes depending on thickness. Stir occasionally to coat evenly.
Finish candied carrots: Remove from heat and stir in 1 tablespoon unsalted butter and 1 tablespoon fresh lemon juice; toss to glaze. Transfer carrots to a sheet of parchment to cool in a single layer. Reserve any remaining syrup for brushing the cake if desired. Chill until ready to top the cake.
Rum-cardamom pineapple purée
Cook pineapple: In a small saucepan combine the pineapple chunks, 2 tablespoons sugar, and 1–2 tablespoons water. Bring to a simmer over medium heat and cook 6–8 minutes until pineapple is softened and juices are released. Stir in ground cardamom and cook 1 minute more.
Blend and finish: Let the pineapple mixture cool slightly, then transfer to a blender or use an immersion blender and purée until smooth. Stir in 2 tablespoons dark rum and 1 tablespoon fresh lime juice. Taste and adjust sweetness or cardamom. Chill the purée; it can be served cold or at room temperature when assembling the cake.
Assemble and finish
Level cakes if needed: If cake tops domed, use a serrated knife or cake leveler to trim so layers are flat and even.
Layer and fill: Place one cake layer on a serving plate or turntable. Spread about one-third of the cream cheese frosting evenly over the top (reserve frosting for exterior). Spoon or drizzle 2–3 tablespoons of the chilled rum-cardamom pineapple purée in a ring in the center of the frosting (leave a 1/2" border so the purée doesn't squeeze out). Spread another thin layer of frosting to seal the purée lightly if necessary. Place the second cake layer on top, pressing gently to even. Reserve any extra purée for serving.
Crumb coat: Apply a thin layer of frosting over the top and sides of the stacked cake to catch crumbs. Chill the cake for 20–30 minutes to set the crumb coat.
Final frosting and decorate: Apply the remaining frosting in an even layer over the top and sides. Use an offset spatula to smooth. Arrange the candied carrots on top decoratively. If desired, spoon small dots or a thin stream of the rum-cardamom pineapple purée onto the top of the cake and gently swirl with the frosting or serve the purée on the side.
Chill and serve: Refrigerate the assembled cake for at least 1 hour to firm the frosting and allow flavors to marry. Bring to room temperature 30–45 minutes before serving for best texture. Slice with a sharp knife dipped in hot water and wiped dry between cuts. Store leftovers refrigerated up to 4 days.
