Prepare chickpeas
If using canned chickpeas, drain them and reserve 1–2 tablespoons of the liquid. For a creamier hummus, optionally peel a few chickpeas by rubbing between clean hands — this is optional but yields silkier texture.
Blend base
In a food processor, combine the drained chickpeas, tahini, lemon juice, garlic cloves, ground cumin, and salt. Pulse until coarsely combined, about 30 seconds.
Emulsify
With the processor running, slowly drizzle in the 1/4 cup olive oil. Continue processing and add cold water (or reserved chickpea liquid) 1 tablespoon at a time until the hummus reaches a smooth, spreadable consistency (about 1–2 minutes of processing total). Stop and scrape down the bowl as needed.
Serve
Spoon hummus into a shallow serving bowl, use the back of a spoon to create a shallow well in the center. Drizzle with a little olive oil, sprinkle smoked paprika, chopped parsley, and toasted pine nuts if using.

Prepare vegetables: Wash all vegetables thoroughly. Peel and cut carrots into sticks about 3 inches long. Slice cucumbers into similar-length sticks. Core and seed the bell pepper, then cut into strips. Halve cherry tomatoes and quarter radishes. Arrange baby spinach or mixed greens on the serving platter as a bed.
