Whisk eggs

Crack the 8 large eggs into a mixing bowl. Add 1/4 cup whole milk, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Whisk vigorously until fully blended and slightly frothy (about 30 seconds).

Cook scrambled eggs

Heat a nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter. Once butter is melted and foamy but not browned, pour in the egg mixture. Let eggs set for 10–15 seconds, then gently stir and fold with a silicone spatula, scraping the bottom and edges. Continue folding every 10–15 seconds until eggs are softly set and creamy (4–6 minutes). Remove from heat while slightly underdone — carryover cooking will finish them. Taste and adjust seasoning if needed. Keep warm.

If using sausage links: Preheat a skillet over medium heat. Add the 6 raw sausage links and cook, turning occasionally, until browned on all sides and cooked through to an internal temperature of 160°F (about 12–15 minutes). If the pan browns too quickly, reduce heat to medium-low and cover for short periods to finish cooking. Transfer to a plate and tent with foil to keep warm.

If using bacon: Lay 6 slices of thick-cut bacon in a cold skillet, then set over medium heat. Cook, turning occasionally, until the bacon reaches desired crispness (about 8–12 minutes). Transfer to a paper-towel-lined plate to drain and keep warm. Reserve a small tablespoon of bacon fat for hashbrowns if desired.

Hashbrowns (Patty OR O'Brien style)

Prepare patties

For frozen patties: Preheat a skillet over medium-high heat and add 1 tablespoon vegetable oil (or follow package instructions). Cook 6 frozen hashbrown patties 3–4 minutes per side until golden and heated through. Season with a light sprinkle of the 3/4 tsp salt and 1/2 tsp black pepper immediately after flipping.

Make O'Brien hashbrowns

For O'Brien style: If using fresh russet potatoes, parboil diced potatoes in salted water for 3–4 minutes until just tender but not falling apart. Drain well and pat dry thoroughly. Heat a large skillet over medium-high heat with 1 tablespoon vegetable oil (or reserved bacon fat) and add the dried potatoes in a single layer. Let cook undisturbed 4–5 minutes to form a crust, then stir. Add 1/2 cup diced yellow onion and 1/2 cup diced red bell pepper, sautéing until vegetables are softened and potatoes are golden brown and crisp (8–12 minutes total). Season with 3/4 tsp salt and 1/2 tsp black pepper. Keep warm.

Fresh Fruit Platter

While proteins and hashbrowns cook, prepare the fruit. Wash grapes and strawberries thoroughly. Hull and halve strawberries, cut pineapple into bite-sized chunks, and segment or peel and slice oranges. Arrange grapes, strawberries, pineapple, and orange segments attractively on a platter or individual plates. Chill briefly if desired.

Condiments & Plating

Portion the scrambled eggs, chosen pork protein (6 sausage links or 6 bacon slices), and chosen hashbrowns (6 patties or O'Brien serving) on each plate. Garnish eggs with 1 tablespoon finely chopped chives if using. Place a small ramekin of ketchup alongside the hashbrowns and provide hot sauce and salsa packets (6 each) on the side. Serve immediately while hot.
