Prepare zucchini

Wash the zucchini and trim the ends. Using a sharp knife or mandoline, cut zucchini into 1/4-inch (about 6 mm) rounds. Aim for uniform thickness so crisps cook evenly.

Salt & drain

Place slices in a single layer on a tray, sprinkle 1/2 teaspoon kosher salt evenly over them, and let sit 10 minutes. After 10 minutes, pat slices dry with paper towels to remove excess moisture (this helps them crisp).

Set up breading station

In three shallow bowls or rimmed plates: 1) all-purpose flour; 2) lightly beaten eggs with 1 tablespoon olive oil and a pinch of salt; 3) mixture of panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, dried oregano, remaining 1/2 teaspoon kosher salt, and black pepper. Mix the breadcrumb mixture thoroughly so the cheese distributes evenly.

Bread the slices

Working in batches, dredge each zucchini slice in flour (shake off excess), dip into the egg wash, then press into the panko-Parmesan mixture to coat both sides well. Place breaded slices on a wire rack or baking sheet while you heat the oil. Repeat until all slices are breaded.

Fry or oven-bake

Frying method (for crispiest results): heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F / 175°C). Fry zucchini in batches without crowding, 2–3 minutes per side, until golden brown. Transfer to a paper-towel-lined tray to drain and season lightly with a pinch of salt while hot. Oven method (lighter, still crispy): preheat oven to 425°F (220°C). Arrange breaded zucchini on a baking sheet lined with parchment and lightly spray or brush the tops with oil. Bake 12–15 minutes, flipping once halfway, until golden and crisp. If desired, broil 1–2 minutes at end to deepen color—watch carefully.

Serve

Let crisps rest 2 minutes, then transfer to a serving platter. Serve hot with the dipping sauce alongside. For happy hour presentation, garnish with extra grated Parmesan and a sprinkle of smoked paprika or chopped fresh parsley.

Combine Greek yogurt and mayonnaise in a small bowl. Add lemon juice, minced garlic, chopped fresh dill, hot sauce (if using), salt, and black pepper. Whisk until smooth and taste-adjust seasoning. If too thick, thin with 1–2 teaspoons water or more lemon juice. Chill briefly or serve immediately alongside the warm zucchini crisps.
