Method
Line the base and sides of a 9-inch springform pan (or a 9-inch pie dish with straight sides) with parchment if desired. Combine 2 cups finely crushed Oreo cookies and 1 tsp granulated sugar in a bowl.
Pour 6 tbs melted butter over the crumbs and stir until the mixture resembles wet sand and holds together when pressed.
Press the crumb mixture evenly into the bottom (and about 1/2 inch up the sides if using a springform) to form a compact crust. Use the bottom of a measuring cup to compact firmly.
Chill the crust in the refrigerator while you prepare the other components, about 15 minutes, or freeze 10 minutes to speed up.
Remove the two ice creams from the freezer 10–15 minutes before assembly so they soften slightly but are not melted. Place softened mocha almond fudge ice cream in a large bowl and sprinkle 1 tsp instant espresso powder over it; fold gently to incorporate espresso for a boosted coffee note.
Spoon half of the mocha almond fudge ice cream over the chilled crust and spread gently into an even layer (about 1 to 1 1/2 inches thick). Smooth with an offset spatula.
Spoon the cookies 'n' creme ice cream over the mocha layer and spread into an even layer. If desired, alternately dollop remaining mocha ice cream and swirl lightly with a knife to create a marbled effect. Press the top gently to compact and smooth.
Cover the assembled pie tightly with plastic wrap and freeze at least 4 hours, preferably overnight, until firm.
Candied walnuts
While the pie freezes, make the candied walnuts. Line a baking sheet with parchment.
In a nonstick skillet over medium heat, combine 3 tbs granulated sugar and 1 tbs butter. Allow the sugar to melt and the mixture to bubble, stirring gently to prevent burning.
Add 1 cup walnut halves and a pinch of salt; toss to coat. Continue cooking 1–2 minutes until nuts are glossy and the sugar crystallizes back slightly, then remove to the prepared baking sheet and separate pieces with a fork. Let cool completely; walnuts will crisp as they cool.
Chocolate drizzle
Combine 4 oz chopped semi-sweet chocolate, 2 tbs heavy cream and 1 tsp corn syrup in a heatproof bowl.
Microwave in 15–20 second bursts, stirring between bursts, until the chocolate is melted and the mixture is smooth. Alternatively, melt over a double boiler. Keep slightly warm for drizzling; if it firms up, rewarm briefly.
Whipped cream
Chill a mixing bowl and beaters for 10 minutes in the freezer if possible. Pour 1.5 cups cold heavy cream into the bowl, add 3 tbs powdered sugar and 1 tsp vanilla extract.
Whip on medium-high speed until soft to medium peaks form (watch carefully to avoid overbeating). Transfer whipped cream to a piping bag fitted with a large star tip or keep in a bowl for spreading.
Assembly and final garnish
Pipe or spread the whipped cream over the top of the frozen pie in an even layer or decorative rosettes.
Drizzle the warm chocolate ganache over the whipped cream in a spiral or zigzag pattern. Spoon or drizzle the 4 tbs caramel sauce in ribbons over the pie, following the chocolate pattern or in a contrasting pattern.
Scatter the candied walnuts and 1/2 cup mini Oreo/chopped Oreo pieces over the top. Dust lightly with 1 tsp cocoa powder if desired.
Return the pie briefly to the freezer for 10–15 minutes to set the decorations if the chocolate or caramel softened the whipped cream. Slice with a hot dry knife (dip in hot water and wipe between cuts) and serve immediately.
