Cajun Chicken

If chicken breasts are thick, butterfly or gently pound them to an even thickness (about 1/2 inch) for even cooking. Pat dry with paper towels.
In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, kosher salt, and black pepper. Rub olive oil over both sides of the chicken breasts, then evenly coat both sides with the spice mix.
Heat a large skillet over medium-high heat. Add butter and let it melt and foam. Place the seasoned chicken in the skillet (do not overcrowd) and cook 4-5 minutes without moving, until a golden crust forms.
Flip the chicken and reduce heat to medium. Cook another 4-5 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If using thicker breasts, cover and cook 1-3 minutes more as needed. Remove chicken to a plate and tent loosely with foil to rest 5 minutes.
Chipotle Mayo
While the chicken rests, combine mayonnaise, finely chopped chipotle in adobo, adobo sauce, lime juice, honey, and salt in a small bowl. Whisk until smooth and taste; adjust heat by adding more adobo or tempered with extra mayo if too spicy. Refrigerate until assembly.
Assembly & Toppings
Slice rested chicken breasts in half horizontally if thick or leave whole if thin. If using whole slices, place a slice of smoked gouda on each hot chicken piece so it softens/melts for 30–60 seconds, covering pan briefly if needed.
Spread 1–2 tablespoons of chipotle mayo on the bottom half of each bun. Place the gouda-topped Cajun chicken on the mayo. Add mixed greens (about 1/2 cup per sandwich) and two tomato slices per sandwich. Spread a little mayo on the top bun as well, then close the sandwich.
Serve immediately. Optionally serve with pickles, fries, or a side salad.
