Make the herbal decoction
In a large saucepan combine 8 cups filtered water, sliced fresh ginger, sliced turmeric root (or 2 tablespoons ground turmeric), whole black peppercorns, cinnamon sticks, and orange peel. Bring to a gentle boil over medium-high heat, then reduce heat to low and simmer, uncovered, for 20–25 minutes to extract flavors and beneficial compounds. Stir occasionally.
Strain and cool
Remove from heat. Using a fine mesh strainer or cheesecloth, strain the hot liquid into a heatproof bowl or pitcher, pressing on solids to extract liquid. Discard or compost solids. Let the decoction cool 10–15 minutes at room temperature until warm (not scalding).
Add acid and sweetener
While the liquid is still warm, whisk in the fresh lemon juice, apple cider vinegar, and raw honey or maple syrup until the sweetener is fully dissolved. Taste and adjust: add more honey/maple for sweetness, or more lemon/vinegar for brightness.
Finish with optional soothing herbs and mint
If using dried chamomile, add it to the warm mixture and let steep 5–7 minutes off the heat, then strain again. Add the fresh mint leaves to the warm tonic to wilt slightly and release aroma, or reserve mint for serving if you prefer a fresher note.
Chill and store
Transfer the tonic to a clean pitcher or glass bottles. Cool to room temperature, then refrigerate until cold (about 2 hours). The concentrated tonic will keep in the refrigerator for up to 7 days.
Serve – still or sparkling
To serve one glass (approx. 1 serving): fill a glass with 1/2 cup chilled iced tonic concentrate, add 1/2 cup sparkling water (or 1/2 cup still water), plenty of ice (about 1/2 cup per glass), and a sprig of fresh mint. Stir gently and garnish with a thin lemon wheel or orange peel. Adjust tonic-to-water ratio to taste (1:1 recommended).
Notes on quantities and variations
This recipe yields about 6–8 servings (depending on dilution). For a caffeine-free warm/soothing drink, serve 3/4 cup tonic concentrate warmed gently with a splash of hot water and a teaspoon of honey. For a probiotic boost, add 1 tablespoon additional apple cider vinegar per serving before serving (stir well). If using ground turmeric instead of fresh, whisk it into the warm liquid and strain; tremor of settled powder may occur—shake before using.
