Method

Preparing the Pork Chop

    Season the Pork Chop

    Rub the bone-in pork chops with olive oil, salt, black pepper, and garlic powder. Ensure they are evenly coated.

    Pan-Sear the Pork Chop

    Heat a skillet over medium-high heat. Place the pork chops in the skillet and sear for about 4-5 minutes on each side until golden brown.

    Roast the Pork Chop

    Transfer the skillet to a preheated oven at 375°F (190°C) and roast for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C).

Making the Orange-Chipotle Glaze

    Prepare the Glaze

    In a small saucepan, combine fresh orange juice, minced chipotle peppers, honey, soy sauce, and minced garlic. Bring to a simmer over medium heat.

    Thicken the Glaze

    Allow the mixture to simmer for about 10-15 minutes until it thickens slightly. Stir often to prevent burning.

    Glaze the Pork Chop

    Once the pork chops are cooked, brush them generously with the orange-chipotle glaze.

Preparing Garlic Mashed Potatoes

    In a large pot, add the peeled and chopped potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes until fork-tender.

    Drain the potatoes and return them to the pot. Add butter, heavy cream, minced garlic, salt, and black pepper. Mash until smooth and creamy.

Roasting Vegetables

    Preheat the oven to 400°F (200°C). Toss sliced carrots and broccoli florets with olive oil, salt, and black pepper in a bowl.

    Spread the vegetables on a baking sheet and roast in the oven for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
