Fritters
Prepare the Artichokes
If using canned artichokes, drain and rinse them. If using frozen, thaw and drain them. Chop the artichokes into small pieces.
Mix the Batter
In a mixing bowl, combine the chopped artichoke hearts, goat cheese, flour, eggs, parsley, minced garlic, salt, and black pepper. Mix until all ingredients are well combined and form a thick batter.
Heat the Oil
In a large skillet, heat enough olive oil over medium heat to cover the bottom of the skillet.
Fry the Fritters
Scoop about 2 tablespoons of the batter and carefully drop it into the hot oil. Flatten slightly with the back of the spoon. Fry until golden brown on both sides, about 3-4 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.
Repeat
Continue frying the remaining batter in batches until all fritters are cooked.
Lemon Aioli
Combine Ingredients
In a small bowl, mix together the mayonnaise, lemon juice, minced garlic, salt, and black pepper until well blended.
Chill
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
