Season the veal cutlets with salt and black pepper on both sides. Then, dredge each cutlet in all-purpose flour, shaking off the excess.

Cook the Veal
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the veal cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the cutlets from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the remaining olive oil and 2 tablespoons of unsalted butter. Once melted, stir in the fresh lemon juice, chicken broth, and capers. Bring the mixture to a simmer.
