Main Ingredients

Method

Main Preparation

  1. 1

    Prepare the Veal

Season the veal cutlets with salt and black pepper on both sides. Dredge each cutlet in flour, shaking off the excess.

  2. 2

    Sauté the Veal

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the veal cutlets in batches, cooking for about 3-4 minutes on each side until golden brown. Remove and set aside.

  3. 3

    Cook the Mushrooms

In the same skillet, add the remaining olive oil and the sliced mushrooms. Sauté for about 5 minutes until the mushrooms are tender and browned.

  4. 4

    Add Marsala Wine

Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom. Bring to a simmer and allow it to reduce by half, about 5-7 minutes.

  5. 5

    Combine Everything

Return the veal cutlets to the skillet, coating them in the sauce. Cook for an additional 2-3 minutes until heated through. Stir in the chopped parsley.

Pasta Preparation

  1. 6

    Cook the Angel Hair Pasta

In a large pot, bring 4 cups of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, usually about 4-5 minutes.

  2. 7

    Drain and Serve

Once cooked, drain the pasta and return it to the pot. Toss with a drizzle of olive oil if desired. Serve the veal marsala over the angel hair pasta.
