Preparing the Steak

Season the Steak
Pat the New York strip steak dry with paper towels. Generously season both sides with salt and cracked black peppercorns, pressing them into the meat to adhere.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Rest the Steak
Remove the steak from the skillet and place it on a cutting board. Tent it with foil and let it rest for 5-10 minutes.
Making the Au Jus

Add Broth and Seasonings
Pour in the beef broth and add Worcestershire sauce. Stir to combine, scraping up any browned bits from the bottom of the skillet.

Incorporate Capers
Add the capers to the broth mixture and season with black pepper to taste. Allow the au jus to simmer for about 5 minutes to reduce slightly.

Strain (Optional)
If desired, strain the au jus through a fine mesh sieve to remove the solids for a smoother sauce.
Serving

Slice and Serve
Slice the rested steak against the grain into thick pieces. Serve drizzled with the tangy au jus and remaining capers on top.
