Preparation of the Chicken

    Preheat your oven to 425°F (220°C).

    Prepare the Chicken

    Rinse the chicken under cold water and pat it dry with paper towels. Place the chicken in a roasting pan.

    Season the Chicken

    In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the chicken, ensuring to get some under the skin for maximum flavor. Squeeze the lemon juice over the chicken and place the lemon halves inside the cavity.

Preparation of the Vegetables

    Prepare the Vegetables

    Wash and peel the carrots, then cut them into 1-inch pieces. Wash the potatoes and cut them into quarters. Peel and cut the red onion into wedges.

    Season the Vegetables

    In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and dried thyme. Toss to coat evenly.

Roasting

    Combine and Roast

    Arrange the seasoned vegetables around the chicken in the roasting pan. Place the pan in the preheated oven and roast for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.
