Pasta Dough

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling

    Prepare the Spinach

    In a skillet over medium heat, sauté minced garlic in a bit of olive oil until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

    Make the Filling

    In a bowl, combine the ricotta cheese, grated Parmesan, sautéed spinach, salt, and pepper. Mix until smooth and well combined. Set aside.

Pesto Sauce

    Make the Pesto

    In a food processor, combine basil, pine nuts, grated Parmesan, garlic, and salt. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth. Taste and adjust seasoning as needed.

To Assemble

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin, about 1/16 inch thick.

    Form the Ravioli

    Cut the rolled dough into squares, approximately 3 inches by 3 inches. Place a teaspoon of filling in the center of half the squares. Moisten the edges with water and cover with the remaining squares. Press the edges to seal.

    Cook the Ravioli

    In a large pot, bring water to a boil. Add salt. Gently drop the ravioli into the boiling water and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli and drizzle with the pesto sauce. Garnish with additional Parmesan cheese, if desired, and serve immediately.
