    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the water and let it bloom for about 5-10 minutes until it absorbs the water and becomes gelatinous.

    Heat Cream Mixture

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir continuously until the mixture is hot but not boiling.

    Add Gelatin

    Once the cream mixture is hot, remove it from the heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving molds or cups. Allow it to cool slightly, then cover with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Sauce

    Prepare Sauce

    In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries have released their juices and the sauce has thickened slightly.

    Cool the Sauce

    Remove from heat and let the berry sauce cool to room temperature. If desired, you can strain the sauce for a smoother texture.

Assembly

    Serve Panna Cotta

    Once the panna cotta has set, carefully unmold it onto serving plates. Top with the berry sauce before serving.
