Cooking the Pasta

Boil the Rigatoni
In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, usually around 10-12 minutes. Drain and set aside.

Sauté the Chicken
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced chicken breast. Sauté for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Season with salt and pepper to taste.

Combine the Ingredients
Add the sun-dried tomatoes, black olives, and spinach to the skillet. Cook for another 2-3 minutes, stirring until the spinach is wilted. Then, add the cooked rigatoni and toss to combine.

Add Feta and Pine Nuts
Remove from heat and gently fold in the crumbled feta cheese and pine nuts. Adjust seasoning with salt and pepper if needed.
