Dough Preparation

Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

Let it Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Prepare the Tomatoes
Slice the ripe tomatoes into thin rounds and season with a little salt. Set aside to let the flavors meld.

Slice the Mozzarella
Cut the fresh mozzarella cheese into thin slices or tear it into chunks.

Prepare Basil
Wash and gently pat the fresh basil leaves dry.
Pizza Assembly and Baking

Preheat the Oven
Preheat your oven to its highest setting (usually around 475°F or 245°C). If using a pizza stone, place it in the oven to heat up.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll or stretch the dough into a 12-inch round pizza shape.

Add Toppings
Transfer the shaped dough onto a baking sheet or preheated pizza stone. Layer with sliced tomatoes, mozzarella, and fresh basil leaves. Drizzle with extra virgin olive oil.

Bake in the preheated oven for about 10-12 minutes, or until the crust is golden and the cheese is bubbling.
