Preparation of Shrimp

    Prepare the Shrimp

    In a bowl, mix the softened goat cheese, chopped parsley, minced garlic, salt, and black pepper until well combined.

    Stuff the Shrimp

    Take each shrimp and carefully stuff it with the goat cheese mixture. Use a toothpick or skewer to secure the filling inside the shrimp.

    Marinate the Shrimp

    Drizzle olive oil over the stuffed shrimp and toss gently to coat. Allow the shrimp to marinate for at least 15 minutes in the refrigerator.

Tomato Butter Sauce

    Make the Sauce

    In a saucepan over medium heat, melt the butter. Add the canned diced tomatoes (with juices), salt, black pepper, basil, and red pepper flakes.

    Bring the sauce to a simmer and cook for about 10-15 minutes, stirring occasionally, until slightly thickened. Adjust seasoning to taste.

Grilling the Shrimp
