Using a sharp knife, create a pocket in the filet mignon by slicing it horizontally. Fill the pocket with gorgonzola cheese, ensuring it is evenly distributed.
Making the Brandy Cream Sauce

Carefully add brandy to the skillet, scraping up any browned bits from the bottom. Allow the brandy to reduce for 1-2 minutes.

Incorporate Heavy Cream
Pour in the heavy cream and stir well. Season with salt and black pepper. Cook on low heat for about 5 minutes, allowing the sauce to thicken slightly.
Serving
