Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Wet Ingredients

In a large mixing bowl, combine the ricotta cheese, granulated sugar, eggs, vanilla extract, and salt. Mix until smooth and creamy.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour and baking powder.

  4. 4

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cake

Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Berry Topping Preparation

  1. 7

    Prepare the Berries

In a medium saucepan, combine the fresh blackberries, granulated sugar, lemon juice, and cornstarch.

  2. 8

    Cook the Topping

Cook over medium heat, stirring gently, until the mixture begins to bubble and thicken, about 5-7 minutes.

  3. 9

    Cool the Topping

Remove from heat and let the berry topping cool to room temperature.

Assembly

  1. 10

    Serve the Cake

Once the cake is completely cooled, slice it and top each slice with the blackberry mixture. Enjoy your homemade ricotta cake!
