Chicken Piccata (angel Hair Pasta) Recipe

    Prepare Chicken Marinade

    In a large bowl, combine lemon juice, olive oil, minced garlic, salt, and black pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

Cooking Chicken

    Cook the Chicken

    Heat a large skillet over medium-high heat. Remove the chicken from the marinade (discard the marinade) and place the chicken in the skillet. Cook for about 5-7 minutes on each side or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Prepare the Sauce

    In the same skillet, add the chicken broth, capers, fresh parsley, and fresh thyme. Bring to a simmer and let it cook for about 3-5 minutes, scraping up any browned bits from the bottom of the skillet. Add butter and stir until melted and combined.

Cooking Pasta

    Cook Angel Hair Pasta

    While the sauce is simmering, bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions, usually about 4-5 minutes. Drain the pasta and reserve a little pasta water.

Combine & Serve

    Combine Chicken and Sauce

    Slice the cooked chicken and return it to the skillet with the sauce. Let it simmer for another 2-3 minutes to combine the flavors.

    Serve

    Plate the angel hair pasta and top with the chicken piccata and sauce. Garnish with additional parsley if desired. Serve immediately.
