Preparation
- 1
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. This helps them cook evenly.
- 2
Season and Dredge
In a shallow dish, combine the flour, salt, and black pepper. Dredge each piece of chicken in the flour mixture, shaking off any excess.
Cooking
- 3
Brown the Chicken
In a large skillet over medium heat, heat the olive oil and 2 tablespoons of butter. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Deglaze the Pan
Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes until slightly reduced.
- 7
Add Broth and Return Chicken
Stir in the chicken broth, then return the browned chicken to the skillet. Simmer for about 10 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Finishing Touches
Sprinkle the chopped parsley over the chicken and sauce before serving.
