Veal Piccata

Prepare the Veal
Flatten the veal cutlets to 1/4 inch thickness using a meat mallet. Season with salt and pepper.

Dredge in Flour
Coat each cutlet in flour, shaking off the excess.

Cook the Veal
In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the cutlets and cook for about 3-4 minutes on each side until golden brown. Remove and set aside.

Prepare the Veal
Flatten the veal cutlets to 1/4 inch thickness. Season with salt and pepper.

Dredge in Egg and Mixture
Dip each cutlet in beaten eggs, then coat with a mixture of breadcrumbs and grated Parmesan cheese.

Serve
Remove from heat and serve hot, garnished with additional Parmesan if desired.

Prepare the Veal
Flatten the veal cutlets and season with salt and pepper.

Add Veal
Add veal to the skillet and cook for 3-4 minutes on each side.

Create the Cream Sauce
Pour in white wine and allow to reduce for 2 minutes, then add heavy cream and thyme. Stir until combined.

Simmer for another 2 minutes, then serve garnished with fresh thyme.
Veal Marsala

Flatten the veal cutlets to 1/4 inch thickness and season with salt and pepper.

Cook the Veal
Add the veal cutlets to the skillet, cooking for about 4 minutes on each side until browned.

Add Marsala and Broth
Pour in the Marsala wine and chicken broth, scraping the skillet to deglaze. Simmer for 5 minutes.

Garnish with fresh parsley and serve hot.
