Prepare the Burger Patties

Season the Beef
In a mixing bowl, combine the ground beef with salt and black pepper. Mix gently until just combined, being careful not to overwork the meat.

Form Patties
Divide the beef mixture into two equal portions and shape them into burger patties, about ¾ inch thick.
Cook the Burgers

Grill the Patties
Cook the burger patties for about 4-5 minutes on one side until browned. Flip the patties and place a slice of provolone cheese on each patty. Cook for an additional 3-4 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

Prepare the Skillet
Using a non-stick skillet, heat a small amount of oil over medium heat.

Toast the Buns
If desired, lightly toast the burger buns on the grill or in a toaster until golden brown.

Layer the Ingredients
Place a cooked burger patty with melted cheese on the bottom half of each bun. Top with a handful of fresh arugula and the over-easy egg. Drizzle with truffle oil to taste.

Place the top half of the bun over the toppings and gently press down. Serve immediately.
