Method

Cake Layers

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well combined.

  3. 3

    Add Wet Ingredients

Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for 2 minutes until well blended.

  4. 4

    Incorporate Boiling Water

Carefully stir in the boiling water and Kahlua. The batter will be thin, but that's normal.

  5. 5

    Bake the Cakes

Divide the batter evenly among the three prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Chocolate Mousse

  1. 6

    Melt the Chocolate

In a microwave-safe bowl, melt the dark chocolate in 30-second intervals until smooth. Let it cool slightly.

  2. 7

    Whip the Cream

In a large bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

  3. 8

    Combine Chocolate and Cream

In a separate bowl, whisk the eggs until frothy. Slowly add the melted chocolate to the eggs, mixing well. Then, gently fold in the whipped cream until fully incorporated.

  4. 9

    Chill the Mousse

Cover the mousse and refrigerate for at least 2 hours to set.

Frosting

  1. 10

    Cream the Butter

In a mixing bowl, beat the unsalted butter until creamy and smooth.

  2. 11

    Add Sugar and Cocoa

Gradually add powdered sugar and cocoa powder to the butter, mixing on low speed until combined.

  3. 12

    Incorporate Cream and Vanilla

Add heavy cream and vanilla extract, and beat on medium speed until the frosting is light and fluffy.

Assembly

  1. 13

    Layer the Cake

Place one layer of chocolate cake on a serving plate. Spread a layer of chocolate mousse on top. Repeat with the second layer, then place the third layer on top.

  2. 14

    Frost the Cake

Spread the chocolate frosting over the top and sides of the cake, smoothing it out as you go.

  3. 15

    Serve

Slice the cake and serve with a glass of Frangelico on the side for a delicious pairing.
