Season the Fish
Rub the fresh fish fillets with olive oil and season with blackening seasoning, salt, and black pepper on both sides. Allow the fish to marinate for about 15 minutes.

Cooking the Fish
Choose one of the following cooking methods: Grilling, Pan-frying, or Blackening. For grilling, preheat the grill to medium-high heat and grill the fish for 4-5 minutes on each side until cooked through. For pan-frying, heat a skillet over medium heat with a little olive oil and cook the fish for 4-5 minutes on each side. For blackening, heat a cast-iron skillet until very hot, add a little oil, and cook the fish for about 3-4 minutes on each side until a dark crust forms.

Make the Citrus Butter
In a small saucepan over low heat, melt the unsalted butter. Once melted, stir in the lemon juice, lime juice, orange zest, minced garlic, and chopped parsley. Allow the mixture to simmer gently for 2-3 minutes to combine the flavors. Remove from heat.
Piccata Sauce Preparation (optional)

Prepare Piccata Sauce
In the same skillet used to cook the fish, add the white wine and scrape up any browned bits from the bottom. Allow the wine to simmer for 2-3 minutes. Stir in the capers and lemon juice, then add the chopped parsley before serving as a sauce over the fish.
