Preparing the Sea Bass

    Marinate the Fish

    In a bowl, combine the olive oil, lemon juice, minced garlic, fresh thyme, salt, and black pepper. Mix well until combined. Place the Chilean Sea Bass fillets in a shallow dish and pour the marinade over them. Make sure the fillets are well coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Fish

    Remove the fillets from the marinade and place them on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork and is cooked through.

Preparing the Vegetable Sides

    Prepare the Asparagus

    Trim the tough ends from the asparagus and place them in a bowl. Add olive oil, garlic powder, salt, and black pepper. Toss to coat evenly.

    Roast the Vegetables

    Spread the asparagus and cherry tomatoes on a separate baking sheet. Roast in the oven alongside the fish for about 15 minutes, or until the asparagus is tender and the tomatoes are blistered.

Serving

    Plate the Dish

    Once the sea bass and vegetables are cooked, plate the fish alongside the roasted asparagus and cherry tomatoes. Garnish with additional fresh thyme if desired. Serve immediately.
