Method
Preparing the Lamb

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Lamb
In a small bowl, mix minced garlic, chopped rosemary, olive oil, salt, and black pepper to create a marinade.

Marinate the Lamb
Rub the marinade all over the rack of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.

Sear the Lamb
In an oven-safe skillet, heat a small amount of olive oil over medium-high heat. Sear the lamb for 2-3 minutes on each side until browned.

Roast the Lamb
Transfer the skillet to the preheated oven. Roast for 20-25 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 130-135°F (54-57°C).

Rest the Lamb
Remove the lamb from the oven and let it rest for 10 minutes before slicing.
Making the Mint Bordelaise

Sauté Shallots
In a saucepan over medium heat, melt 1 tablespoon of butter and sauté the finely chopped shallots until translucent, about 2-3 minutes.

Add Wine
Pour in the red wine and bring it to a boil. Allow it to simmer until reduced by half, about 5-7 minutes.

Add Beef Stock
Stir in the beef stock and continue to simmer until the sauce thickens slightly, about 10 minutes.

Finish the Sauce
Remove from heat and stir in the remaining tablespoon of butter, chopped mint, salt, and black pepper to taste.
