Preparing the Asparagus

Trim the Asparagus

Start by washing the asparagus under cold water. Snap off the tough ends of the asparagus by bending each stalk until it naturally breaks.

Season the Asparagus

In a mixing bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

Grill or Steam

Preheat your grill to medium-high heat. Place the asparagus on the grill and cook for 5-7 minutes, turning occasionally, until tender and slightly charred. Alternatively, steam the asparagus for about 4-5 minutes until bright green and tender.

Making the Hollandaise Sauce

Melt the Butter

In a small saucepan, melt the butter over low heat until it is completely liquid. Remove from heat and let it cool slightly.

Whisk the Egg Yolks

In a medium bowl, whisk the egg yolks and lemon juice together until the mixture is pale and thick.

Combine and Whisk

Gradually pour the melted butter into the egg yolk mixture, whisking constantly until it is smooth and creamy. If the sauce is too thick, you can add a teaspoon of warm water to thin it out.

Season the Sauce

Add a pinch of salt and cayenne pepper to the Hollandaise sauce, adjusting to taste. Keep the sauce warm until ready to serve.
