Method

Cooking the Filet

  1. 1

    Prepare the Steak

Remove the Prime Filet Mignon from the refrigerator and let it come to room temperature for about 30 minutes. This ensures even cooking.

  2. 2

    Season the Steak

Generously season both sides of the filet with kosher salt and black pepper. Press the seasoning into the meat for better adherence.

  3. 3

    Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

  4. 4

    Sear the Steak

Once the oil is hot, carefully place the filet mignon in the skillet. Sear for 3-4 minutes on one side without moving it to develop a crust.

  5. 5

    Flip the Steak

Using tongs, carefully flip the steak to the other side. Add fresh rosemary and crushed garlic cloves to the pan.

  6. 6

    Cook to Desired Doneness

Cook for an additional 3-4 minutes for medium-rare, or longer if you prefer it more well done. Baste the steak with the pan juices during the last minute of cooking.

  7. 7

    Rest the Steak

Remove the filet from the skillet and transfer it to a cutting board. Allow it to rest for 5-10 minutes before slicing to retain the juices.

Preparing Optional Sides

  1. 8

    Roasting Asparagus

Preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper, then arrange on a baking sheet. Roast for 12-15 minutes until tender.

  2. 9

    Boiling Baby Potatoes

In a pot of salted water, add baby potatoes and bring to a boil. Cook for 15-20 minutes until fork-tender. Drain and serve with butter and herbs.
