    Prepare ingredients

    Clean mushrooms by wiping with a damp paper towel or very briefly rinsing and patting dry. Trim stems if woody and slice mushrooms into 1/4-inch thick slices. Finely dice the yellow onion. Mince the garlic. Chop the cilantro and set aside. Measure spices.

    Cook aromatics

    Heat a large skillet over medium-high heat. Add olive oil and butter. When butter foams, add the diced onion. Sauté 4–5 minutes until translucent and beginning to brown around the edges. Add the minced garlic and cook 30–45 seconds until fragrant, stirring constantly to prevent burning.

    Brown mushrooms

    Add the sliced mushrooms in a single layer (work in two batches if necessary). Increase heat to high and let mushrooms sear undisturbed 2 minutes, then stir and continue cooking 3–4 minutes until well browned and most of their liquid has evaporated.

    Season and deglaze

    Stir in ground cumin, smoked paprika, chili powder, salt, and black pepper. Cook 30 seconds to bloom the spices. Pour in 1/4 cup vegetable broth to deglaze the pan, scraping up browned bits from the bottom with a wooden spoon. Reduce heat to medium and let the liquid evaporate until just a few tablespoons remain, about 1–2 minutes.

    Finish filling

    Remove skillet from heat and stir in lime juice and chopped cilantro. Taste and adjust seasoning with extra salt or lime if needed. Keep warm while you heat shells and assemble.

    Heat hard taco shells

    Preheat oven to 375°F (190°C). Arrange hard corn shells on a rimmed baking sheet standing upright or lying flat as manufacturer recommends. Warm for 5–7 minutes until crisp and heated through (follow package instructions if different). For extra crispness, bake an additional 2–3 minutes.

    Prepare toppings

    While shells heat, shred lettuce, grate cheese if needed, and have pickled red onions, sour cream, hot sauce, and lime wedges ready. If using store-bought pickled onions, drain them slightly. Stir hot sauce into sour cream if you want a quick spicy crema (optional).

    Assemble tacos

    Fill each warm shell with about 2–3 tablespoons of shredded lettuce, then divide the mushroom filling evenly among 8 shells (about 1.5 tablespoons or more per taco depending on size). Top each taco with 1–2 tablespoons shredded cheese, a spoonful of pickled red onions if using, and a drizzle or dollop of sour cream or spicy crema. Finish with a few cilantro leaves and a squeeze of lime.
