Prep paneer
Pat paneer cubes dry with paper towels so they sear instead of steaming. If using store-bought pressed paneer, cut into roughly 1-inch cubes.

Season paneer
In a medium bowl, toss the paneer cubes with 1 tablespoon olive oil, 1 tablespoon melted or softened butter, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon ground coriander, 1/2 teaspoon garlic powder, 1/2 teaspoon chili powder, 3/4 teaspoon salt, and 1/2 teaspoon black pepper until evenly coated.

Sear paneer
Heat a large nonstick or cast-iron skillet over medium-high heat. When hot, add seasoned paneer in a single layer (work in batches if necessary). Sear undisturbed for 2-3 minutes per side until golden brown and slightly crisp. Remove seared paneer to a plate and set aside.

Cook aromatics
In the same skillet used for paneer (wipe out excess oil but keep fond), add 1 tablespoon olive oil over medium heat. Add 1/2 cup finely chopped yellow onion and cook 2-3 minutes until translucent. Add 1/2 cup diced red bell pepper and the minced jalapeño; cook 1-2 minutes until softened.

Add cauliflower rice
Add 4 cups cauliflower rice to the skillet, stirring to combine with the aromatics. Sprinkle 1/2 teaspoon ground cumin and 1/2 teaspoon salt over the cauliflower. Cook, stirring occasionally, 5-7 minutes until the cauliflower is tender but not mushy and any excess moisture has evaporated.

Finish cauliflower rice
Remove skillet from heat. Stir in 1 tablespoon lime juice and 1/4 cup chopped fresh cilantro. Taste and adjust seasoning (add a pinch more salt or lime if needed). Keep warm.
Cheesy Sauce

In a small saucepan over low heat, combine 3 ounces softened cream cheese and 1/4 cup heavy cream. Stir until smooth and warm, then add 1 cup shredded cheddar, 1/2 teaspoon lime zest, 1/4 teaspoon chili powder, and 1/4 teaspoon salt. Stir constantly until the cheese melts into a glossy, pourable sauce. If too thick, add 1-2 tablespoons more cream to reach desired consistency. Keep warm on the lowest heat or transfer to a small warmed bowl.

Assemble bowls
Divide the cauliflower rice evenly between 2 large bowls (about 2 cups cauliflower rice per serving). Arrange seared paneer cubes on top of the rice (about 7 oz paneer per bowl). Drizzle each bowl with half the cheesy sauce (about 1/2 cup sauce per bowl) or to taste.

Top each bowl with shredded lettuce (about 1/2 cup), sliced avocado (1/2 avocado per bowl), a dollop of sour cream or Greek yogurt (about 1/4 cup per bowl), chopped green onions (1 tablespoon per bowl), and extra cilantro. Place lime wedges on the side and offer hot sauce if desired.
