Black bean fajita filling

Prep vegetables and beans
Rinse and drain the canned black beans. Thinly slice the red and green bell peppers and dice the yellow onion into roughly 1/4-inch strips or pieces so they cook evenly.

Sauté aromatics & peppers
Heat a medium skillet over medium-high heat. Add 1 tablespoon olive oil. When shimmering, add the sliced peppers and diced onion and cook, stirring occasionally, until they begin to soften and develop light browning, about 5–6 minutes.

Add garlic and spices
Reduce heat to medium. Add the minced garlic, ground cumin, chili powder, and smoked paprika to the skillet. Stir and cook 30–45 seconds until fragrant, taking care not to burn the garlic.

Finish filling
Remove skillet from heat. Stir in the fresh lime juice, chopped cilantro, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Taste and adjust seasoning as needed. Set the filling aside while you prepare the tortillas and other components.

Prepare the avocado and tomato. Halve and pit the avocado, then slice thinly. Dice the Roma tomato into small pieces and pat dry if it is particularly juicy. Combine the shredded Monterey Jack and cheddar cheeses in a small bowl. If using lime crema, mix 1/4 cup sour cream (or Greek yogurt) with a teaspoon of lime juice and a pinch of salt to form the crema.

Assemble quesadillas
Lay one flour tortilla flat. Sprinkle about 1/4 cup of the cheese mixture over half the tortilla, leaving a small border. Spoon about 1/3 cup of the warm black bean fajita filling over the cheese. Top the beans with a few slices of avocado and about 1–2 tablespoons diced tomato. Add a small drizzle (about 1 teaspoon) of lime crema if using. Fold the empty half of the tortilla over the filled half to form a semicircle. Repeat for the remaining tortillas (makes 4 quesadillas).

Cook quesadillas
Heat a large skillet or griddle over medium heat and add about 1/2 tablespoon butter or a light coating of oil. When hot, place a folded quesadilla seam-side down. Cook 2–3 minutes until the underside is golden brown and the cheese begins to melt. Carefully flip (use a spatula and press gently) and cook an additional 1.5–2 minutes until the second side is golden and cheese is fully melted. Reduce heat slightly if the tortillas are browning too quickly before the cheese melts. Repeat for remaining quesadillas, adding more butter or oil as needed.

Serve
Transfer cooked quesadillas to a cutting board and let rest 1 minute. Cut each into thirds or halves with a sharp knife or pizza cutter. Serve hot with extra lime crema, salsa, hot sauce, or a wedge of lime on the side.
