Heat skillet
Place a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon of olive oil and let it warm until shimmering (about 30 seconds).

Sauté peppers and onions
Add the sliced peppers and onions to the hot skillet. Cook, stirring occasionally, until softened and slightly charred at the edges, about 6–8 minutes. If the pan looks dry, add the second tablespoon of olive oil during cooking.

Add aromatics and spices
Reduce heat to medium, push the vegetables to the side, and add the minced garlic to the pan for 30 seconds until fragrant. Sprinkle the ground cumin, chili powder, smoked paprika, salt, and black pepper over the vegetables and garlic. Stir to combine and cook 1 minute to toast the spices.

Finish with cilantro
Remove the filling from heat and stir in the chopped cilantro. Keep warm while you prepare tortillas and toppings.

Assemble burritos
Lay a warmed tortilla on a clean work surface. Spoon about 1/2 cup of the fajita black bean filling down the center of the tortilla. Top with about 1/4 cup shredded cheese, 2 tablespoons salsa or pico de gallo, 2 tablespoons sour cream or Greek yogurt, and sliced or mashed avocado. Add hot sauce if desired.

Fold burrito
Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to enclose the filling, forming a burrito. Repeat with remaining tortillas and filling (should make 4 burritos).

For a crisp exterior, heat a dry skillet over medium and place each burrito seam-side down. Cook 1–2 minutes per side until golden and slightly crisp, pressing gently with a spatula.
