    Preheat & Dry

    Preheat your oven to 425°F (220°C). Spread the rinsed and drained chickpeas on a clean kitchen towel or several layers of paper towels and gently pat them dry. Remove as many loose skins as possible for extra crispness.

    Toss with Coating

    In a medium bowl, combine olive oil, cornstarch, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Add the dried chickpeas and toss thoroughly until they are evenly coated.

    Roast

    Arrange the coated chickpeas in a single layer on a rimmed baking sheet lined with parchment paper or a silicone mat. Roast in the preheated oven for 20–30 minutes, shaking the pan or stirring every 8–10 minutes so they brown evenly. Roast until golden and crispy on the outside.

    Finish

    When chickpeas are crisp, remove from oven and immediately squeeze 1 tablespoon lime juice over them and toss. Taste and adjust salt if needed. Let cool slightly — they will crisp more as they cool.

Burrito Assembly

    Warm Tortillas & Rice

    Warm the flour tortillas on a dry skillet over medium heat for about 20–30 seconds per side or wrap in a damp paper towel and microwave for 20–30 seconds. If desired, reheat the cooked rice in the microwave until hot (about 1–2 minutes).

    Layer

    Lay a warm tortilla flat. In the center of the tortilla, layer about 1/2 cup cooked rice, 1/2 cup crispy chickpeas (use slightly less if adding black beans), 1/4 cup shredded cheese, 1/4–1/2 cup shredded lettuce, 2–3 tablespoons pico de gallo or chopped tomatoes, 2 tablespoons sliced avocado or 1/4 cup guacamole, and a spoonful (approximately 1–2 tablespoons) of sour cream or Greek yogurt. Add hot sauce or salsa verde to taste, a sprinkle of chopped cilantro, and any optional add-ins (about 1–2 tablespoons pickled jalapeños, 2 tablespoons corn, or 1/4 cup black beans) if using.

    Fold & Toast

    Fold the sides of the tortilla in, then roll tightly from the bottom to form a burrito. For a crisp exterior, place seam-side down on a skillet over medium heat with a little oil or butter and toast 1–2 minutes per side until golden and sealed. Alternatively, place seam-side down for 30–60 seconds to set in the hot skillet without additional oil.

    Slice the burrito in half if desired. Serve immediately with lime wedges, extra salsa or hot sauce on the side, and remaining cilantro sprinkled on top.

Notes & Tips

    For extra crunch, try air-frying the coated chickpeas at 400°F (200°C) for 12–15 minutes, shaking halfway. To make this vegan, use plant-based yogurt or omit the sour cream and cheese or use dairy-free alternatives. Leftover chickpeas can be stored in an airtight container at room temperature for up to 2 days but are crispiest when fresh.
