Preheat & Dry
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. After draining and rinsing the chickpeas, spread them on a clean kitchen towel or several layers of paper towel and gently rub to remove loose skins and dry thoroughly. Pat as dry as possible — moisture prevents crisping.

Season
Transfer dried chickpeas to a bowl. Add 2 tablespoons olive oil, smoked paprika, ground cumin, garlic powder, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Toss until each chickpea is evenly coated.

Roast
Spread chickpeas in a single layer on the prepared baking sheet (avoid crowding). Roast for 20–30 minutes, shaking the pan or stirring every 8–10 minutes, until chickpeas are deep golden and crisp. Keep an eye during the last 5 minutes to prevent burning. If they soften after cooling, return to the oven for 3–5 minutes.

While chickpeas roast, assemble the salad. In a large bowl combine mixed salad greens, halved cherry tomatoes, diced cucumber, diced red bell pepper, thinly sliced red onion, and chopped parsley. Toss gently to mix. If using, sprinkle crumbled feta over the top but hold off tossing with dressing until the dressing is ready.

Make Dressing
In a small bowl or jar whisk together 3 tablespoons tahini, 3 teaspoons fresh lemon juice, 3 tablespoons warm water, 1 teaspoon olive oil, 1 teaspoon honey or maple syrup, 1/2 teaspoon minced garlic, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. If the dressing is too thick, add warm water 1 teaspoon at a time until it reaches a smooth, pourable consistency. Taste and adjust salt, lemon, or sweetener as needed.

When chickpeas are done, remove from oven and let cool 3–5 minutes on the baking sheet; they will crisp further as they cool. Transfer warm chickpeas to the salad bowl (or reserve some to finish on top for maximum crunch). Drizzle dressing over the salad — start with about half and toss gently, adding more to taste so leaves are coated but not soggy.

Sprinkle lemon zest, toasted pumpkin seeds or chopped pistachios, and a small drizzle (about 1 teaspoon) of olive oil over the salad. If you reserved some chickpeas, scatter them on top for crunch. Serve immediately.
