Prepare the marinade
In a medium bowl combine chopped adobo peppers (use some adobo sauce from the can if desired for more heat), chipotle powder, ground cumin, minced garlic, olive oil, lime juice, kosher salt, and black pepper. Whisk until a smooth paste forms.

Marinate the chicken
Trim any excess fat from the chicken thighs. Place chicken in a shallow dish or resealable bag and pour marinade over it, making sure all pieces are coated. Refrigerate for at least 30 minutes and up to 4 hours (longer will intensify flavor).
Cook Chicken

Heat a large skillet or cast-iron pan over medium-high heat until hot. Add 1 tablespoon oil to the pan and sear chicken thighs 4–5 minutes per side until deeply browned and cooked through (internal temperature 165°F / 74°C). If thighs are thick, reduce heat to medium and cover for a few minutes to ensure doneness. Remove chicken to a cutting board and let rest 5 minutes.

Slice or shred the rested chicken into bite-size pieces or thin strips. Toss with any accumulated juices from the cutting board and taste; adjust seasoning with a pinch of salt or a squeeze of lime if needed.

If you prefer extra-crispy shells, heat neutral oil in a medium heavy-bottomed skillet to 350°F (175°C) — or heat about 1/2" depth of oil over medium heat until shimmering but not smoking. Working in batches, fry each hard shell 10–20 seconds per side, using tongs to hold the shell open so oil reaches the inside. Shells should bubble and become deeper golden. Drain on paper towels. Alternatively, warm shells in a 350°F (180°C) oven for 5–7 minutes if skipping frying.
Assemble Tacos

Rewarm shredded chicken briefly in the skillet over low heat if it cooled. Take one hard shell and add about 2–3 tablespoons of shredded lettuce as a base inside each shell to help absorb juices.

Add a dollop (about 1 teaspoon) of sour cream to each taco and finish with a squeeze of lime. Add hot sauce to taste if desired.

Arrange tacos on a platter and serve immediately while shells are crisp and chicken is warm. Pass extra lime wedges, hot sauce, and additional cilantro or cheese on the side.
