Prep and marinate
Pound or slice chicken breasts into 1/2-inch thick cutlets (about 4 pieces) or cut into 1/2-inch dice if you prefer smaller pieces. In a bowl combine minced chipotle peppers, adobo sauce, minced garlic, cumin, smoked paprika, kosher salt, black pepper, olive oil, and lime juice. Add chicken and toss to coat thoroughly. Marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator.

Cook chicken
Heat a large skillet over medium-high heat. Add 1/2 tablespoon oil if skillet is dry. Add the marinated chicken in a single layer (cook diced chicken in the same pan but stir occasionally). Cook cutlets 3–4 minutes per side until nicely browned and internal temperature reaches 165°F (74°C). For diced chicken cook 5–7 minutes, stirring, until cooked through and slightly caramelized. Remove chicken to a plate and let rest 3 minutes, then slice or shred into bite-size pieces if you cooked whole cutlets.

While the chicken rests, whisk together sour cream, lime juice, minced chipotle, honey (if using) and 1/4 tsp salt in a small bowl until smooth. Taste and adjust seasoning or chipotle to heat preference. Cover and refrigerate until ready to serve.

Assemble quesadillas
Lay out 4 flour tortillas. On each tortilla, sprinkle about 1/4 cup Monterey Jack and 2 tablespoons cheddar covering half the tortilla. Top the cheese with an even portion of the cooked chipotle chicken (about 1/4 lb total chicken divided across 4 tortillas), a few slices of red onion, a tablespoon of roasted corn if using, a few cilantro leaves, and 2–3 slices of avocado. Top with another 1/4 cup Monterey Jack and a small sprinkle of cheddar, then fold the tortilla over to create a half-moon.

Cook quesadillas
Heat a large nonstick skillet or griddle over medium heat. Add about 1/2 tablespoon butter or oil. Place one assembled quesadilla in the pan and cook 2–3 minutes until the bottom is golden brown and the cheese begins to melt. Carefully flip and cook the other side 1.5–2 minutes until golden and cheese is fully melted. Repeat with remaining tortillas, adding more butter or oil as needed. Press gently with a spatula while cooking to ensure even contact and melting.

Finish and serve
Transfer cooked quesadillas to a cutting board and let rest 1 minute. Cut each into 3 wedges. Serve warm topped with a drizzle of chipotle-lime crema and extra cilantro. Offer lime wedges on the side.
