Blackened Chicken

    Prep and spice the chicken

    Pat chicken thighs dry with paper towels. If using breasts, pound to even thickness ~1/2 inch. In a small bowl combine smoked paprika, garlic powder, onion powder, dried oregano, ground cumin, cayenne pepper, black pepper and kosher salt. Drizzle chicken with 2 tablespoons olive oil and rub evenly, then sprinkle and press the blackening spice mix onto both sides of the chicken until well coated.

    Cook the chicken

    Heat a large heavy skillet (cast-iron recommended) over medium-high heat until very hot, about 3–4 minutes. Add 1 tablespoon butter to the pan and swirl. Add the spiced chicken, working in a single layer without crowding. Sear 4–5 minutes per side (thinner pieces may take less) until a dark char forms and internal temperature reaches 165°F (74°C). If pieces are thick, reduce heat to medium and cover for the last 2–3 minutes to finish through. Transfer cooked chicken to a cutting board and let rest 5 minutes, then slice thinly across the grain into bite-size strips.

    Make the crema-style sauce

    In a small bowl whisk together sour cream (or Greek yogurt), mayonnaise, hot sauce, honey (if using), salt and black pepper until smooth. Taste and adjust seasoning; add a squeeze of the lime (about 1 teaspoon) for brightness if desired.

    Prep vegetables and toppings

    Thinly slice red onion, quarter cherry tomatoes, shred cabbage if not pre-shredded, chop cilantro, and slice avocado. Toss cabbage with a pinch of salt and 1 teaspoon lime juice to soften slightly and add brightness.

    Warm tortillas

    Warm tortillas on a dry skillet over medium heat about 20–30 seconds per side until pliable and slightly charred, or wrap in a damp towel and microwave for 20–30 seconds. Keep wrapped to stay warm.

    Assemble tacos

    Lay each warm tortilla flat. Spread about 1 tablespoon of the crema sauce down the center of each tortilla. Add a small handful (about 2–3 oz) of sliced blackened chicken, top with shredded cabbage, a few cherry tomato quarters, a slice or two of avocado, and a sprinkle of red onion and cilantro. Drizzle additional sauce if desired and add pickled jalapeños for heat and a squeeze of lime.

    Serve tacos immediately with lime wedges, extra cilantro, and crumbled cotija or feta sprinkled on top. Offer additional hot sauce on the side.
