Prep the chicken
Pat the chicken breasts dry with paper towels. If breasts are thick, butterfly or pound to an even 1/2-inch thickness so they cook evenly (about 2–3 minutes). Season both sides lightly with 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper to build base seasoning.

Make blackening spice
In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, remaining kosher salt (1/2 tsp) and remaining black pepper (1/3 tsp). Stir until evenly mixed.

Coat the chicken
Rub 1 tablespoon olive oil evenly over both sides of the chicken breasts. Sprinkle the blackening spice generously over both sides, pressing gently so the spice adheres and forms a compact crust.

Cook the chicken
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 3–4 minutes. Add 1 tablespoon unsalted butter and let it melt and foam. Add the chicken breasts and cook undisturbed 3–4 minutes until a deep dark crust forms (but not burned). Flip and cook 3–4 more minutes, or until the internal temperature reaches 165°F (74°C). If breasts are thicker, reduce heat slightly after flipping and cover for 1–2 minutes to finish cooking without burning the crust.

Rest and slice
Transfer chicken to a cutting board and let rest 5 minutes. Slice thinly against the grain into 1/4-inch strips suitable for tacos.
Optional Quick Slaw

While the chicken rests, combine shredded cabbage, grated carrot, mayonnaise, lime juice, 1/4 tsp salt and 1/8 tsp black pepper in a bowl. Toss until evenly coated. Taste and adjust seasoning. Refrigerate briefly until ready to assemble.

Warm shells
Preheat oven to 350°F (175°C). Arrange hard taco shells on a baking sheet and warm 4–6 minutes until crisp and heated through. Alternatively, warm in a skillet over medium heat for 30–60 seconds per side.

Prepare avocado
Halve, pit and slice the avocado thinly. Lightly squeeze a little lime over slices to prevent browning and add brightness.

Fill tacos: Place a small handful (~2 tablespoons) of shredded romaine in the bottom of each warmed shell. Add 2–3 slices of blackened chicken per taco (or enough to fill), then top with shredded cheddar (about 1–2 tablespoons), diced tomatoes (about 1 tablespoon), thinly sliced red onion (a few slivers), and a small spoonful of the quick slaw if using.

Finish & serve: Dollop about 1 teaspoon of sour cream on each taco or drizzle hot sauce to taste. Garnish with fresh cilantro leaves and a squeeze of lime juice from the lime wedges. Serve immediately while shells are crisp and chicken is warm.
