Method

Preparing the Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

    Prepare Egg Mixture

    In another bowl, whisk together the eggs and milk until well combined.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Dip each calamari ring first into the egg mixture, then coat it with the dry mixture, shaking off any excess flour.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finish with Parsley

    Once the sauce is thickened, stir in the fresh parsley before serving.
