Cake Preparation

  1. 1

    Preheat Oven

Preheat your oven to 200°C (400°F) and grease four ramekins with butter, then dust with cocoa powder or flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy.

  4. 4

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg and sugar mixture, stirring gently to combine.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour and add a pinch of salt and vanilla extract. Fold the mixture gently until just combined.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  7. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 8

    Cool and Serve

Let the cakes cool for 1 minute after removing from the oven. Invert each ramekin onto a plate and gently lift it off to reveal the lava cake. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
