Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust with flour, tapping out the excess.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt together over a pot of simmering water (bain-marie) or in the microwave in short bursts, stirring until smooth. Set aside to cool slightly.

Batter Preparation

  1. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and eggs until pale and frothy, about 3-5 minutes.

  2. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly until fully combined.

  3. 5

    Add Dry Ingredients

Sift in the all-purpose flour, add the vanilla extract and a pinch of salt. Gently fold the mixture until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the cake batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.

  3. 8

    Cool Slightly

Remove from the oven and let cool for 1-2 minutes before inverting onto plates.

Serving

  1. 9

    Plate the Fondant

Dust the warm chocolate fondants with powdered sugar. Serve immediately with a scoop of vanilla ice cream and fresh berries.
