    Melt chocolate

    Place the chopped dark chocolate and diced butter in a heatproof bowl set over (not touching) a pot of simmering water (double boiler). Stir often until chocolate is fully melted and smooth, about 3–5 minutes. Remove from heat and let cool slightly (2–3 minutes) but remain fluid.

    Temper egg yolks

    Whisk the egg yolks lightly in a small bowl. Add 1 tablespoon of the warm melted chocolate to the yolks while whisking continuously to temper, then whisk in another tablespoon. Pour the tempered yolk mixture back into the bowl with the rest of the melted chocolate and stir until fully incorporated and glossy. Stir in the vanilla and a pinch of salt. Set aside to cool to lukewarm (about 5 minutes).

    Whip cream

    In a chilled mixing bowl, whip the cold heavy cream to soft peaks using a whisk or electric mixer on medium speed (about 2–3 minutes). Be careful not to overwhip; you want soft but stable peaks. Reserve about 2 tablespoons of whipped cream for garnish if using.

    Whisk egg whites

    In a clean, dry mixing bowl, beat the egg whites until they become foamy. Gradually add the granulated sugar, about 1 tablespoon at a time, while continuing to beat until glossy medium-stiff peaks form (stiff enough to hold shape but still slightly glossy), about 3–4 minutes.

    Fold components together

    First fold one-quarter of the whipped cream into the cooled chocolate mixture to lighten it, using a rubber spatula and gentle folding motion. Next fold in half of the whipped egg whites to further loosen the chocolate base. Once uniform, fold in the remaining whipped cream, then fold in the remaining egg whites gently until no streaks remain. Use wide strokes and turn the bowl; do not overmix to preserve airiness.

    Portion and chill

    Spoon or pipe the mousse into serving glasses or ramekins, filling to desired level. Smooth the tops. Chill uncovered in the refrigerator for at least 2 hours to set (3–4 hours for firmer texture).

Garnish and serve

    Before serving, dust the mousse lightly with cocoa powder using a fine sieve, add a dollop (about 1 tablespoon) of reserved whipped cream if desired, top with fresh berries and chocolate shavings. Serve chilled.
