Chocolate Genoise (Cake Layer)

Dry ingredients
Sift together the all-purpose flour and cocoa powder into a bowl. Add the salt and whisk to combine.

Whisk eggs and sugar
In a heatproof bowl set over a simmering pot of water (bain-marie), whisk the 4 eggs and 3/4 cup granulated sugar until warm to the touch (about 110°F/43°C) and sugar mostly dissolved, about 3–4 minutes. Remove from heat and use an electric mixer to beat until tripled in volume and thick, about 6–8 minutes. Beat in the vanilla extract.

Fold in dry ingredients
Gently fold the sifted flour/cocoa mixture into the whipped eggs in three additions using a rubber spatula, taking care not to deflate the batter.

Add butter
Drizzle the melted butter around the batter edge and fold once or twice just to incorporate.

Bake and cool
Pour batter into prepared pan, smooth the top, and bake 12–15 minutes until a toothpick comes out with a few moist crumbs. Cool in pan 5 minutes, then invert onto a rack and cool completely. Once cooled, trim if needed to create an even 9-inch round layer about 1/2 inch thick. Place in serving ring or springform as base for mousses.
Dark Chocolate Mousse (Bottom Mousse)

Bloom gelatin (if using)
Sprinkle 1 tsp gelatin over 2 tbsp cold water in a small bowl. Let stand 5–10 minutes to bloom.

Make custard base
Warm 1/2 cup whole milk in a small saucepan until just simmering. In a heatproof bowl whisk 3 egg yolks with 2 tbsp sugar until smooth. Temper the yolks by slowly whisking in ~1/4 cup of the hot milk, then pour tempered yolks back into the saucepan with remaining milk. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (do not boil). Remove from heat.

Combine chocolate and custard
Pour hot custard over the chopped dark chocolate in a bowl. Let sit 1 minute, then stir until smooth. Stir in 1 tbsp butter until glossy. If using gelatin, microwave bloomed gelatin 5–8 seconds until dissolved and whisk into the chocolate mixture until fully blended. Let chocolate mixture cool to room temperature but not set.

Whip cream
Whip 1 1/2 cups cold heavy cream to soft peaks.

Fold and layer
Fold one-third of whipped cream into the cooled chocolate mixture to lighten, then gently fold in remaining cream until homogeneous. Spread the dark chocolate mousse evenly over the cooled genoise layer in your cake ring or pan, smoothing the top. Chill in refrigerator 30–45 minutes until slightly set but still tacky for next layer.
Milk Chocolate Mousse (Middle Mousse)

Bloom gelatin (if using)
Sprinkle 3/4 tsp gelatin over 1.5 tbsp cold water. Let sit 5–10 minutes.

Combine with chocolate
Pour hot custard over chopped milk chocolate. Let sit 1 minute, then stir until smooth. Add 1 tbsp butter and stir. If using gelatin, dissolve bloomed gelatin in microwave 5–8 seconds and whisk into the chocolate-custard until integrated. Allow mixture to cool to room temperature.

Whip cream and fold
Whip 1 cup cold heavy cream to soft peaks. Fold a small portion of whipped cream into the cooled milk-chocolate mixture to loosen, then fold in the remainder gently until even.

Layer
Carefully spread the milk chocolate mousse over the chilled dark mousse, smoothing the top. Refrigerate 30–40 minutes until set enough for the final layer.
White Chocolate Mousse (Top Mousse)

Bloom gelatin (if using)
Sprinkle 1/2 tsp gelatin over 1 tbsp cold water. Let bloom 5–10 minutes.

Combine with chocolate
Pour hot custard over chopped white chocolate. Let sit 1 minute, then stir until smooth. Stir in 1 tsp butter. If using gelatin, dissolve bloomed gelatin briefly in microwave and whisk into the mixture. Cool to room temperature.

Whip cream and fold
Whip 3/4 cup cold heavy cream to soft peaks. Fold a small amount into the white-chocolate mixture to loosen, then fold in remaining cream gently until uniform.

Final layer
Spread the white chocolate mousse evenly over the chilled milk chocolate layer. Smooth the top with a spatula. Cover and refrigerate at least 4 hours, preferably overnight, to allow all layers to set firmly.
Assembly & Garnish

Unmold
Run a thin-bladed knife between the mousse and ring to loosen. If using a springform release the ring. For a clean finish, warm the knife briefly in hot water and dry before trimming edges.

Garnish
Dust the top lightly with cocoa powder or scatter chocolate shavings. Arrange fresh raspberries or mint leaves around the top if desired.

Serve
Slice with a hot, dry knife (wipe between cuts) and serve chilled. Keeps refrigerated up to 3 days.
