Steak Filling

    Prep and Marinate

    Place the thinly sliced steak in a bowl. Add 3 tablespoons A-1, 1 tablespoon vegetable oil, 1/2 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Toss to coat and let sit at room temperature for 10–15 minutes while you prep vegetables.

    Grill or Sear Steak

    Heat a large cast-iron skillet or grill pan over medium-high heat until very hot. Add a thin film of oil if using a skillet. Spread steak in an even layer and sear for 2 minutes without moving, then stir and continue cooking until just cooked through, about 1–2 more minutes (total 3–4 minutes depending on thickness). Remove steak to a plate and keep warm. Do not overcook — slices should remain tender.

Vegetables & Cheese

    Sauté Vegetables

    In the same hot skillet, reduce heat to medium and add 1 tablespoon butter (or oil). Add the sliced onion, green and red bell peppers and mushrooms. Season lightly with a pinch of salt. Sauté, stirring occasionally, until vegetables are softened and starting to brown, about 6–8 minutes. In the last 1 minute, add the minced garlic and stir until fragrant.

    Combine Steak and Veggies

    Return the cooked steak and any accumulated juices to the skillet with the vegetables. Toss together and heat through for 1–2 minutes so flavors meld. Taste and add additional A-1 (up to the extra 2 tablespoons reserved) or a pinch of salt/pepper if desired.

    Melt Cheese

    Divide the steak-and-vegetable mixture into two portions in the skillet. Top each portion evenly with 2 slices of Swiss cheese (4 total). Cover the skillet with a lid or a sheet of foil and let the cheese melt for 1–2 minutes until gooey.

Rolls & Finish

    Toast Rolls

    While the cheese melts, split the French rolls and lightly butter cut sides. Toast cut-side down in a separate skillet over medium heat for 1–2 minutes until golden, or place under a broiler for 45–60 seconds. Watch carefully to avoid burning.

    Assemble Sandwiches

    Using a spatula, scoop a cheese-topped portion of the steak and vegetables onto each toasted roll. Drizzle additional A-1 steak sauce to taste, close sandwiches, and serve immediately.

    Bake Fries

    Preheat oven and bake fries according to package directions (typically 425°F/220°C for 15–25 minutes) tossing halfway through. Lightly coat with oil or spray at start for extra crispness. When fries are golden, remove from oven, season with salt to taste and serve alongside the sandwiches.
