Meat Choice

    Prepare the meat

    Choose one: For bacon — place 3 thick-cut bacon slices in a cold skillet, turn heat to medium, and cook 6–10 minutes turning occasionally until crisp-tender. Drain on paper towels. For pork or turkey sausage links — heat 1 tsp vegetable oil in a skillet over medium, add 3 links and cook 10–12 minutes, turning frequently, until browned and cooked through (internal temperature 160°F/71°C for pork, 165°F/74°C for turkey). Keep warm while preparing eggs and French toast.

French Toast

    Make custard and soak bread

    In a shallow bowl or pie plate, whisk together 1 egg, 1/4 cup whole milk, 1/4 tsp vanilla extract, 1/8 tsp ground cinnamon and 1/2 tsp granulated sugar until combined. Heat a nonstick or cast-iron skillet over medium heat and add 1 tbsp unsalted butter to melt. Dip each thick bread slice into the custard, letting it soak 10–15 seconds per side (longer for very thick slices), allowing excess to drip off.

    Cook French toast

    Place soaked bread in the hot skillet and cook 2–3 minutes per side, or until golden brown and set. Reduce heat slightly if outsides brown too quickly. Add additional 1/2 tbsp butter if needed for the second slice. When done, transfer to a warm plate, dust lightly with 1/2 tsp powdered sugar if desired, and keep warm.

    Cook eggs any style — suggestion: over-easy

    While French toast cooks, wipe skillet clean or use a second small nonstick pan. Heat 1 tbsp unsalted butter over medium-low. Crack 2 eggs into a small bowl, then gently slide into skillet. Season with 1/4 tsp salt and 1/8 tsp pepper. For over-easy: cook 2–3 minutes until whites set, carefully flip with a spatula, and cook 20–30 seconds for runny yolks. For scrambled: whisk eggs first and cook, stirring, until soft-set. For fried-sunny-side-up: cook without flipping until whites set. Remove eggs to plate and keep warm with French toast and meat.

To Serve

    Arrange two slices of French toast, place the two eggs beside them, and add the chosen meat (3 bacon strips or 3 sausage links). Add 1/2 tbsp butter on the French toast if desired, and serve with 2 tbsp maple syrup and optional 1/4 cup fresh fruit on the side.
