Yogurt base

Method

Prep

  1. 1

    Wash and prepare berries

Rinse all berries under cold running water and drain in a colander. Pat dry gently with a clean towel. Hull and quarter the strawberries; leave smaller berries whole. Place berries in a medium bowl.

  2. 2

    Toast nuts (if using)

Heat a small dry skillet over medium heat. Add the sliced almonds or chopped walnuts in a single layer and toast, stirring or shaking the pan, until fragrant and lightly golden, about 2–3 minutes. Immediately transfer to a plate to cool.

Fruit dressing (optional, for macerated berries)

  1. 3

If you prefer brighter, slightly syrupy berries, toss the prepared berries with 1 teaspoon of honey and 1/2 teaspoon lemon zest. Gently fold and let sit at room temperature for 10–15 minutes to macerate. If you want the berries plain, skip this step.

Assemble

  1. 4

    Flavor the yogurt

In a medium bowl, stir the Greek yogurt with the vanilla extract and the 1 teaspoon lemon zest (if using) until smooth and lightly whipped.

  2. 5

    Portion yogurt

Divide the flavored Greek yogurt between 2 serving bowls or jars (about 1 cup each). Smooth the tops with the back of a spoon.

  3. 6

    Top with berries

Arrange the prepared berries over the yogurt, distributing them evenly. If you macerated the berries, spoon any accumulated syrup over the yogurt as well.

  4. 7

    Finish with toppings

Drizzle 1 tablespoon of honey over each portion. Sprinkle the toasted nuts and chia or flaxseed evenly. Garnish with fresh mint leaves and a light dusting of extra lemon zest or grated dark chocolate if desired.

Serve & store

  1. 8

Serve immediately for best texture. If making ahead, keep the yogurt base chilled and store berries separately in the refrigerator for up to 24 hours; assemble just before serving to keep nuts crunchy.
