    Safety first

    Put on disposable gloves and work in a well-ventilated area. Keep face away from fumes when cutting ghost peppers. Have neutralizing agents (milk or yogurt) nearby in case of skin/eye exposure.

    Remove stems from the ghost peppers. If you prefer slightly milder heat, remove some or all of the seeds and inner membranes using a small spoon — do this while wearing gloves.

    Roughly chop the tomatoes and onion so they will cook evenly; peel the garlic but leave cloves whole.

Cooking

    Sauté aromatics

    Heat 2 tablespoons olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté 5–7 minutes until softened and translucent. Add the garlic and sauté another 1–2 minutes until fragrant, taking care not to burn.

    Simmer peppers and tomatoes

    Add the prepared ghost peppers and quartered tomatoes to the saucepan. Pour in 1 cup distilled white vinegar and 1 cup water. Bring mixture to a gentle simmer, then reduce heat to low and simmer, uncovered, for 12–15 minutes until tomatoes are softened and peppers are cooked through. Stir occasionally.

Seasoning & blending

    Add spices and sweeteners

    Stir in 2 teaspoons kosher salt, 1 teaspoon granulated sugar, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, 1 teaspoon ground coriander, and 1 tablespoon honey. Simmer for another 2–3 minutes to marry the flavors.

    Cool slightly

    Remove the saucepan from heat and let the mixture cool 8–10 minutes so hot steam won't force liquid into your blender container.

    Blend to a smooth sauce

    Carefully transfer the mixture to a blender (or use an immersion blender in the pot). Add 2 tablespoons fresh lime juice. Blend on high until completely smooth, about 60–90 seconds. For an extra-smooth texture, strain the blended sauce through a fine-mesh sieve into a bowl, pressing solids with a spatula; discard solids or reserve for another use.

    Adjust consistency and flavor

    Taste the sauce and adjust seasoning: add up to 1/2 teaspoon more salt, a touch more honey for sweetness, or more lime for acidity as desired. If the sauce is too thick, thin with up to 2 tablespoons water or vinegar until desired 10 oz bottle consistency is reached.

    Optional sheen

    For a glossy finish, whisk in 1 teaspoon neutral oil once sauce is cooled to warm.

    Bottle and refrigerate

    Ladle the finished sauce into a sterilized 10 oz jar or bottle, leaving 1/2 inch headspace. Seal tightly and refrigerate. The sauce will be hot immediately but flavors deepen after 24–48 hours. Stored in the refrigerator, it will keep 2–3 months; for longer shelf life, process in a hot-water bath following safe canning practices.
